通过甲酸溶液提取和固相萃取净化浓缩裹粉水产品中的丙烯酰胺,建立了液相色谱串联质谱(HPLC/MS/MS)检测裹粉水产品丙烯酰胺的方法,并研究了温度和pH等因素影响美拉德反应产生丙烯酰胺的影响.结果表明,该检测方法在20-3000 μ g/L范围内线性良好,r2＞0.99,检出限为10 u g/kg,定量限为30 u g/kg,回收率在94.3％～105.4％,满足裹粉水产品中丙烯酰胺的检测.
