Lysozyme sol were prepared by phase transition process at mild condition in present of TCEP at room temperature (25℃).Lysozyme sol obtained by our method is completely denatured and different from previous reported amyloid fiber which is unbranched protofilaments, even it was found that circular dichroism spectra in the far-ultraviolet region of lysozyme changed to those characteristic of a β-structure from the native α-helix rich spectrum, lysozyme nanofibers has very special self-assembly behavior depend.
