A new protein cross-linking enzyme of microbial transglutaminase (MTG) was produced from an potent mutant,Streptomyces sp.WZFF.M-1-S5-15-58 isolated out from the space breeding mutation through being loaded in "Shenzhou" 5 Spacecraft,and used for the improvement of the enzymatic cross-linking effects on the soybean protein fiber processing.
