Whey protein isolate (WPI)-dextran conjugates were prepared via the Maillard reaction in macromolecular crowding environments under neutral pH and 60 ℃.The covalent attachment of dextran to Whey protein isolate was confirmed by sodium dodecyl sulfate-polyacrylamide gel electrophoresis (SDS-PAGE).
