OBJECTIVE: To understand the contamination status of nitrite in cooked-meat products and assess its daily intake through cooked-meat products in Wuhan.METHODS: Surveillance data of nitrite in cooked-meat products were collected and analyzed.Daily intake of nitrite through cooked-meat products was calculated by Point Estimate model on dietary intake and nitrite contamination data in Wuhan.ADI of nitrite was also used to assess the risk of nitrite in cooked-meat products on Wuhan inhabitant.RESULTS: 3.15% of the 683 products were beyond the MRLs.Pork and poultry cooked-meat products were the two highest products beyond the MRLs (45.83% and 45.83%).In addition, the nitrite exposure quantity of nonage group was the highest (0.09mg/kg).The inhabitant daily intake of nitrite through cooked-meat products was 0.09x10-2mg/kg bw/day and the HI was 0.01.CONCLUSION:This study did not find there was a risk in the meat products of people lived in inner of Wuhan city but it did not make sure if there was not a risk of nitrite for people which should be studied in the future.
