Chinese jujube (Ziziphus jujube Mill) is a favored and profitable fruit for its high nutritional value.It contains rich flavonoids,which could easily be damaged during processing.To check the flavonoids content in the jujube during processing,a rapid and specific determination method with the standard substance of rutin at room temperature was adopted by using spectrophotometer.The results showed that:1.The average content of flavonoids in fresh fruits is about 1.17mg/g.2.During hot air and far infrared treatment,under higher temperature and longer time drying especially above 80℃ and more than 2 hours,could make the flavonoids content decrease sharply (loss more than 12.0%).
