随着生活水平的提高,人们对鸡肉的需求已不仅仅停留在其数量上,对品质的追求也越来越高,更加关注肉品质和肌肉的营养价值.从国内外家禽产业的发展趋势看,优质肉鸡所占市场份额正逐渐增加,特别是亚洲国家,优质肉鸡将成为肉鸡生产的主流.中国的地方鸡种以其肉质优良、味道鲜美、营养价值丰富而闻名.鸡的品种与肉品质密切相关,它可以影响鸡的脂肪沉积、分布以及肉色和风味.鸡肉的pH值、肉色、嫩度、系水力和风味物质含量在不同鸡品种间均有显著差异.
