Natural antioxidants have gained considerable interest in recent years for their role in preventing the auto oxidation of fats,oils,and fat containing food products.In the present study,the antioxidant activity of the ethanolic extracts of Prunus yedoensis Matsumura were evaluated using DPPH radical scavenging activity,reducing power,nitrite scavenging activity,superoxide anion scavenging activity,ABTS+ scavenging activity.The extracts were obtained successively using liquid-liquid partition to yield n-hexane,dichloromethane,ethyl acetate,n-butanol and water fractions.DPPH radical scavenging activity was the highest in ethyl acetate fraction(IC50 =3.47±0.11).
