From an era where food engineering dealt with hardware and heavy machinery,like any other branch of engineering,the discipline has changed significantly in the last five decades.The type of research undertaken has also changed during this period,largely to reflect the changing needs of the society.There has been a paradigm shift in the nature of research,which has transformed from being farm focused to consumer focused.Food engineering research thus began around the technologies used to process and preserve farm produce,with significant efforts and resources being put into areas such as thermal processing,dehydration,freezing and other operations.
