  Overproduction of galactomatnan hydrolysing fungal enzymes for functional food and industrial applications Ogel ZB1,Duruksu G1,Gurkok S1,Biely P2 1Middle East Technical University,Turkey 2Slovak Academy of Sciences,Slovakia Glycosidase-based enzymatic synthesis approaches and controlled degradation of polysaccharides enable the development of novel food ingredients and functional foods from renewable sources.In this study,endo-b-marnanase and a-galactosidase genes were isolated from Aspergillus fumigatus and overexpressed in Aspergillus sojae under the control of the glyeeraldehyde triphosphate dehydrogenase (gpdA) promoter.
