Alisma orientale (Sam.) Juzep is used as an important herbal ingredient in traditional Chinese medicine and functional diet for diabetes and urinary condition.Only sundried tuber of Alisma orientale but not the fresh one is used as medicinal ingredient.In this work,the influences of sundrying and decoction processes on the amino acid contents were investigated.The total amino acid (TAA) and free amino acid (FAA) contents of fresh and sundried Alisma orientale roots,and its decoction,were determined by amino acid analyzer.The non-enzyme glycated protein of the roots was determined by PAS staining.
