Inhibitory activities of grape seed proanthocyanidins (GSPs) against α-amylase and α-glucosidase were studied by using high-throughput starch turbidity method (HtST).Then,the binding interaction of GSPs with common grain powder was determined with full spectrum scan in order to design some low glycemic index (GI) staple foods.The results indicated that GSPs possessed good anti-diabetic activities with the IC50 of 0.053mg/mL and 0.055mg/mL against α-amylase and α-glucosidase,respectively.
