Carotenoids are a diverse group of yellow-orange pigments, which are broadly divided in two general classes: hydrocarbon carotenes and their oxidized derivatives known as xanthophylls.It is well known that animals do not make themselves carotenoids, but they can absorb carotenoids from their diets and transform and accumulate them in body tissues such as skin, gonad, and muscle.
