Several fungi are associated with maize during pre-and postharvest periods, of which the genus F.verticillioides and F.proliferatum, known as the main producers of the fumonisin-mycotoxin.Clearly, the pre-or post-harvest prevention of fumonisin contamination has to be the preferred strategy for minimizing its occurrence in food and feed.
