The possibility of using supercritical CO2 fluid extraction (SCE) to modify the physicochemical properties of dietary fiber from bamboo shoot industry by-products was studied.The sample was subjected to supercritical CO2 fluid extraction (SCE) with different extraction pressure,different extraction temperature and different extraction time,the effect of processing variables on chemical composition,physicochemical properties and microscopic structure of the dietary fiber was evaluated.The total dietary fiber content,the distribution between soluble and insoluble fiber was slightly affected by SCE with different condition.Water-holding capacities,oil-holding capacities,and water swelling capacities were increased with increased extraction pressure,extraction temperature and extraction time.
