Enzymatic hydrolysis and homogenization are widely used to improve functional properties of protein.In this contribution,3-conglycinin-Rich Soy Protein Isolate(CRSPI) prepared by the method of Deak were treated by three methods limited enzymatic hydrolysis(DH 0.5%),high-pressure homogenization (25MPa,once) and combination modification(homogenization after enzymatic hydrolysis),in addition,characterization of their corresponding.
