The metabolites of amaranth by HLM were separated and identified by LC-MS.The results showed the five major metabolites of amaranth were 2-hydroxy-3,6-naphthalene disulfoacid,1-hydroxylamine-2-hydroxyl-3,6-naphthalene disulfoacid,1-naphthalenesulfoacid,1-amine-4-naphthalenesulfoacid and 4-sulfonate-dihydroxynaphthldiazene.Some of the metabolites have been proved to be carcinogenic and teratogenic,and should be paid attention to.
