除国家法律规定的自宰自食的畜禽外,凡上市销售的肉食品均须由指定的屠宰场屠宰,这对于控制一些人畜共患疾病,如布氏菌病、炭疽、寄生虫病等都是非常重要的。但是,在村镇农贸市场经常以肉角、肉块、肉片、肉柈等非完整肉尸形式出售的肉食品,其屠宰多出于非指定屠宰场所,而且事先不经过卫生检验,可靠性差。这些肉食品在运输过程中常被以各种麻袋、塑料袋包裹,或以筐篓盛装,卫生条件极差,加之席地叫卖,蝇爬尘落,更增加了细菌侵入的机会,对其消费者的健康危害很大。笔者现根据工作中的经验体会,介绍一些适合农村农贸市场在短时间内对肉食品进行快速卫生检验的方法,
