我国的野菜遍布全国各地,产量大,营养价值高。野菜的营养成分主要有:蛋白质、脂肪、糖类、粗纤维、钙、磷、铁、胡萝卜素和维生素 C 等。这些都是人体所必需的营养元素。有些野菜的营养成分比某些粮食作物还高,如:紫苜蓿中所含某些氨基酸的量比稻米、小麦都高。此外,有多种野菜,还具有较高的药用价值。有的野菜中,蛋白质含量虽然较少,但各种氨基酸成分比较平衡。与主食掺和食用,可使膳食中蛋白质的生物作用提高。几千年来,我国人民一直经常采集野菜食用,食法亦多种多样,已在民间形成了传统的食用方法。由于野菜的营养
