检测深圳市市售常见食品中钼含量并评估居民钼的膳食摄入量。于2015年在深圳市采集各类食品样品共340个,利用微波消解-电感耦合等离子体测定食品中钼含量。结合膳食调查数据计算居民钼膳食摄入量。结果表明,豆及豆制品、大米、小麦粉、坚果和杂粮类的钼含量相对较高。深圳市本地居民每日通过食物钼摄入量约为165 mg。大米及其制品是深圳居民钼摄入的主要来源,深圳居民每日钼的摄入量是适宜且安全的。
Detection of molybdenum content of common foods on the market in Shenzhen and assessment of dietary intake of molybdenum. In 2015, 340 samples of various types of food were collected in Shenzhen City. The content of molybdenum in food was determined by microwave digestion-inductively coupled plasma (ICP-IC). Combined with dietary survey data to calculate residents’ dietary intake of molybdenum. The results show that beans and soy products, rice, wheat flour, nuts and grains of molybdenum content is relatively high. Daily consumption of molybdenum by local residents in Shenzhen is about 165 mg. Rice and its products are the main source of molybdenum intake of Shenzhen residents, Shenzhen daily intake of molybdenum is appropriate and safe.
