以九月底采收的白花莲藕为材料,清洗脱皮后经H2PO4,Na2SO3浸泡处理,HPE薄膜袋密封包装,并置于冷库及常温库内贮藏,贮藏期间研究其生理变化实验结果表明:脱皮莲藕在冷藏期间呼吸强度、乙醇含量、果胶甲脂酶活性逐渐上升,而多酚氧化酶及过氧化物酶活性逐渐降低,脱皮与未脱皮莲藕贮藏生理有一定的差异贮藏温度对脱皮莲藕生理有较大的影响,随贮藏温度升高,脱皮莲藕加速衰老
