河北省高阳县北晋庄食用菌协会理事长张更深,带领80户会员常年栽培平菇。年产300吨,不仅销往全国,还经盐渍加工后出口,一次创汇39750美元,取得了较好的经济效益。他们盐渍平菇的方法如下:一、采收一般在菌盖展开,连柄处下凹,边缘平伸,颜色由深逐渐变浅,少量孢子释放时采收最好。这时菇蛋白质含量高,也比较鲜嫩。过早采收虽然营养高,但影响产量,过晚则影响质量。采收时左手按培养料,右手握菇柄旋转拧下;也可用不锈钢剪刀从子实体基部贴料面剪下。二、分级采收后要先清除杂质,去掉生霉及病虫危害的菇体,把菇柄老化部分剪去;成丛的要逐个分开。然后分级,标准是:菌盖直径1.5—2.5厘米,菇柄无基部老化根的为特级;菌盖直径3—5厘米,柄长是菌盖直径尺寸的1/3为一级;菌盖直径5—8厘米,
