民族食品,即习惯上所说的少数民族食品。以我国餐饮市场上的菜肴为例,民族菜占10%,宾馆菜点20%,大众菜占70%。与民族菜肴一样,虽然民族食品所占比例较小,但它却是我国食品大家族的重要一员,面对着一个庞大的消费群体。民族食品原料特殊、制作方法独特、口味各异,无不具有本民族的风味特色。它多以粗犷、奇异、自然、乡土气息浓郁、营养丰富、食俗朴实而深受人们的喜爱。把民族食品归纳起来,主要有八大类:
Ethnic food, which is customarily referred to as ethnic food. Taking the dishes on the Chinese catering market as an example, ethnic dishes make up 10%, hotel dishes 20% and public dishes 70%. Like national dishes, although ethnic food accounts for a relatively small proportion, it is an important member of the large food family in our country and faces a huge consumer group. National food special raw materials, production methods unique, different tastes, all with all the flavor characteristics of the nation. It is mostly rough, strange, natural, rich rustic flavor, nutrient-rich, simple and popular food popular with people’s favorite. To sum up the national food, there are eight categories:
