目的:了解十堰市市售食品中铅、镉、砷、汞污染状况及分布和高危食品种类。方法:在全国食品污染物监测网控制体系下,2000年~2008年采集14大类市售食品共计742份,应用氢化物原子荧光光度法检测砷、汞含量,应用石墨炉原子吸收法检测铅、镉含量。结果:742份食品样品中,铅、镉、砷、汞在食品中总检出率为63.2%,总超标率为3.77%,铅超标率为4.57%;镉超标率为3.23%;砷超标率为5.00%;汞超标率为1.56%。其中皮蛋类和肉及动物内脏类食品中总超标率分别为8.89%,7.09%,食用菌超标率为5.95%,超标率较高,是重金属污染的高危食品。其它类食品中污染不是十分严重,但都有铅、镉、砷、汞检出,检出率分别为:68.0%、62.6%、32.5%、60.9%。结论:说明铅、镉、砷、汞在食品中存在不同程度的积累,对人体健康存在潜在的威胁。
Objective: To understand the pollution status and distribution of lead, cadmium, arsenic and mercury, and the types of high-risk foods in Shiyan City. Methods: In the control system of food contamination monitoring network of China, 742 foodstuffs of 14 categories were collected from 2000 to 2008, and the contents of arsenic and mercury were determined by hydride atomic fluorescence spectrometry. The contents of lead and cadmium were determined by graphite furnace atomic absorption spectrometry , Cadmium content. Results: The total detection rate of lead, cadmium, arsenic and mercury in food was 63.2% in 742 food samples, the total over-standard rate was 3.77%, the over-standard rate of lead was 4.57%, the over-standard rate of cadmium was 3.23% 5.00%; mercury exceeded the standard rate of 1.56%. The total over-standard rates of preserved eggs and meat and animal offal foods were 8.89% and 7.09%, respectively. The over-standard rate of edible fungi was 5.95%, and the over-standard rate was high. It was a high-risk food with heavy metal pollution. Other types of food contamination is not very serious, but there are lead, cadmium, arsenic, mercury were detected, the detection rates were: 68.0%, 62.6%, 32.5%, 60.9%. Conclusion: This indicates that lead, cadmium, arsenic and mercury accumulate to varying degrees in food and pose a potential threat to human health.
