临湘县年产边销茶约15万担,绿茶约7000担。边销茶中老青茶产量不多,改制茶比重最大,提高改制茶质量,是发展临湘茶叶生产的晕点,是提高临湘茯砖品质的基础。临湘改制茶是不同于黑茶和老青茶的一种边茶原料。它与老青茶比,多了一道发酵工序;与黑茶比,干燥不用烘焙,采用阳光直接晒干。其初制过程分为:改刀—打浆—杀青—揉捻—发酵(渥堆)—复揉—干燥。
