侧耳根又称折耳菜、猪鼻孔、蕺儿菜,药名鱼腥草,为三白草科多年生草本植物。每到初春,幼芽破土展叶,溢散清香,全株具鱼腥气,可炒食、凉拌、作汤(泡开水),被誉为餐桌佳肴,因症施药又系一味良药。 侧耳根每百克嫩茎叶含碳水化合物6克,蛋白质2.2克,脂肪0.4克,钙74毫克,磷53毫克,挥发油(丹桂油烯、半脂酸、月桂醛等)0.49毫克。据医书载,还含有鱼腥草素、蕺菜碱、多种维生素,叶含槲皮甙,根中含甲基正王酮和香叶烯等。
