Modern science and medicine confirm that vegetable oil is not only a good edible oil for people, but also an ideal edible oil for the elderly and those suffering from arteriosclerosis, hypertension and diabetes. The scientific appraisal, vegetable oils by the difference of fatty acids, can be divided into three categories.
