提高植物性食品中碘的含量水平,是人体自然补碘防治碘缺乏病(IDD)最有效的途径之一.通过向土壤施加海藻有机碘肥进行蔬菜植物碘的强化,培育了10种含碘蔬菜,并采用卤素与银生成沉淀和结合显微观察的方法,在确定细胞组织中碘存在位置的基础上,深入研究了蔬菜植物对土壤外源碘的生物吸收与转移过程.结果表明,蔬菜对碘的吸收量随海藻有机碘肥施用量的增加而增加,叶类蔬菜的碘吸收量明显大于果类蔬菜,蔬菜中碘的含量呈现出根>叶>茎>果的分布特征,碘在蔬菜各器官细胞中的相对含量显示出细胞质>细胞壁>细胞器的分配特征,这为揭示蔬菜植物对碘的吸收机理和生物地球化学迁移提供了新认识,同时为建立通过植物碘强化的人体自然补碘新途径提供了科学依据和技术支撑.
