香菇是一种木腐菌,能将木材中的木质素、纤维素和半纤维素等大分子降解为小分子作为主要碳源。通过对香菇转化利用秸秆过程中多聚物降解酶进行综述。漆酶、愈创木酚氧化酶、多酚氧化酶等木质素降解酶对秸秆中木质素的降解起关键作用;羧甲基纤维素酶(Cx酶)、滤纸纤维素酶(C1酶)、β-葡萄糖苷酶等纤维素降解酶对秸秆中纤维素的降解起关键作用;β-1,4-内切木聚糖酶、β-木糖苷酶等半纤维素降解酶对秸秆中半纤维素的降解起关键作用。在秸秆利用过程中,果胶酶和脂肪酶等也发挥一定作用。
