目的了解广州市白云机场航空食品微生物的污染情况,为食品安全分析和监管提供理论依据。方法对白云机场3家航空食品生产企业进行监测分析,在2013-2015年基于GB 4789-2010《食品安全国家标准食品微生物学检验》共检测了1 294份样品。结果 2013-2015年航空食品微生物总合格率为94.74%,经χ_(趋势)~2性检验,呈逐年上升趋势(χ_(趋势)~2=36.866,P=0.000)。其中,菌落总数、大肠菌群和霉菌计数合格率经χ_(趋势)~2性检验,差异有统计学意义(χ_(趋势)~2=6.447、37.960、6.767,P=0.000);不同航空食品种类中,热食食品、凉拌菜、冷加工食品合格率经χ_(趋势)~2性检验,均呈逐年上升趋势(χ_(趋势)~2=10.268、7.568、13.737、5.754,P<0.05),即食类航空食品均曾检出食源性致病菌。除了第四季度,不同年度相同季节均呈上升趋势(χ_(趋势)~2=16.726、12.191、7.654,P<0.05)。同年度四个季度航空食品合格率差异均无统计学意义(P>0.05)。结论白云机场航空食品卫生情况总体稳定,但仍然存在微生物污染问题,特别是即食类食品,卫生问题较为突出,应加强监督。
Objective To understand the contamination status of aviation food microbes in Guangzhou Baiyun Airport and provide theoretical basis for food safety analysis and supervision. Methods Monitoring and analyzing three aviation food production enterprises in Baiyun Airport. A total of 1 294 samples were tested based on GB 4789-2010 “National Food Safety Microbiological Examination” in 2013-2015. Results The total qualification rate of aviation food microorganisms in 2013-2015 was 94.74%. The trend was gradually increasing (χ_ (trend) ~ 2 = 36.866, P = 0.000) by χ_ (trend) ~ 2 test. Among them, the total number of colonies, coliform and mold pass rate by χ_ (trend) ~ 2 test, the difference was statistically significant (χ_ (trend) ~ 2 = 6.447,37.960,6.767, P = 0.000); different aviation food In the types, the passing rate of hot food, cold salad and cold processed food increased year by year (χ_ (trend) ~ 2 = 10.268, 7.568, 13.737, 5.754, P <0.05) Food aviation foods have been detected foodborne pathogens. Except in the fourth quarter, the same season in different years showed an upward trend (χ_ (trend) ~ 2 = 16.726,12.191,7.654, P <0.05). There was no significant difference in passing rate of aviation food in the same quarter (P> 0.05). Conclusion Baiyun Airport overall aviation food hygiene situation is generally stable, but there are still microbial contamination problems, especially instant food, health problems are more prominent, supervision should be strengthened.
