目的对婴幼儿配方米粉中肠杆菌科细菌污染情况进行调查,为今后制定相应标准及技术壁垒提供科学依据。方法选择3种基础肠道分离培养基组合应用,对几种常见的肠杆菌科细菌在3种基础肠道分离培养基上进行生物学特性反应差异比较,生化鉴定。结果应用伊红美蓝、麦康凯、山梨醇麦康凯3种基础肠道分离培养基组合,观察其不同形态特征及生物学特性反应,可初步判别及肠杆菌科中不同的属以及同属不同种。对市场抽检的52件婴幼儿配方米粉,检出肠杆菌科细菌27株,阳性率51.92%。其中肺炎克雷伯氏菌9株,阪崎肠杆菌4株,阴沟肠杆菌5株,聚团肠杆菌5株。大肠埃希菌4株,检出率分别为17.30%、7.69%、9.61%、9.61%、7.69%。结论加强对婴幼儿谷类食品中的细菌污染的控制很重要。
Objective To investigate the bacterial contamination of enterobacteriaceae in infant formula rice flour and to provide a scientific basis for formulating the corresponding standards and technical barriers in the future. Methods Three kinds of basic intestinal separation medium were selected and applied. The biological characteristics of several common Enterobacteriaceae bacteria in three kinds of basic intestinal separation medium were compared and biochemically identified. Results The combination of three basic intestinal culture mediums of eosine blue, wheatcomycin and sorbitol was applied to observe the morphological characteristics and biological characteristics of the enterobacteriaceae. The results showed that different genera and different genera of Enterobacteriaceae . On the market sampling of 52 infant formula rice noodles, 27 strains of Enterobacteriaceae were detected, the positive rate was 51.92%. Including Klebsiella pneumoniae 9, Enterobacter sakazakii 4, Enterobacter cloacae 5, Enterobacter agglomerans 5. 4 strains of Escherichia coli, the detection rates were 17.30%, 7.69%, 9.61%, 9.61%, 7.69% respectively. Conclusion It is important to strengthen the control of bacterial contamination in infants and young children’s cereals.
