目的针对市售即食食品进行致病菌金黄色葡萄球菌检测,了解灵宝市市售即食食品中金黄色葡萄球菌的污染状况,并初步确定易受污染的高危即食食品的品种,为预防和控制因其而引起的食源性疾病提供科学依据。方法根据国家食源性致病菌监测网的相关要求,2011-2015年对灵宝市各农贸市场、超市及酒店餐馆进行随机采样,并按照国家标准,对所采集的样本进行检测。结果 8类722份样本中共检出金黄色葡萄球菌21株,总检出率2.91%;除节令性食品(粽子、月饼)中未检出金黄色葡萄球菌外,其余各类样本中均有检出;不同季节无显著性差异。结论灵宝市市售即食食品中金黄色葡萄球菌的污染较为严重,熟肉制品、冰激凌、速冻米面制品和凉拌菜污染金黄色葡萄球菌尤为严重,属易受污染的高危即食食品的种类,应引起足够的重视。
Objective To detect the pathogenic bacteria Staphylococcus aureus in ready-to-eat foodstuffs and to find out the status of Staphylococcus aureus in the commercial ready-to-eat food in Lingbao City, and to identify the varieties of high-risk ready-to-eat food which are easy to be polluted so as to prevent and control Because of the food-borne diseases caused by providing a scientific basis. Methods According to the requirements of National Foodborne Pathogenic Network, from 2011 to 2015, all farmers’ markets, supermarkets and restaurants in Lingbao city were randomly sampled, and the collected samples were tested according to national standards. Results 21 strains of Staphylococcus aureus were detected in 722 samples of 8 categories, with a total detection rate of 2.91%. In addition to the no detectable Staphylococcus aureus in seasonal foods (dumplings, mooncakes), all the other samples were detected Out; no significant difference in different seasons. Conclusion The contamination of Staphylococcus aureus in the commercial ready-to-eat foodstuffs in Lingbao City is serious. Cooked meat products, ice cream, quick-frozen rice noodles products and cold dish contaminated Staphylococcus aureus are especially serious, which are easily contaminated high-risk ready-to-eat foods Caused enough attention.
