江西黄酒以甜型为主,因其产量大,风味佳美,工艺独特而颇具声誉。江西甜黄酒主要有以下几种: 封缸酒产于九江市。相传唐元和年(806—820)开始酿造。因其生产过程中需要密封酒缸而得名。采用淋饭法生产,待酒酿在U形窝内有3—4寸高时,加入50°左右的米白酒以终止发酵,白酒分五次加入。经封缸缓慢发酵3—6个月后,压榨除糟,再入地下室陈酿。该酒呈琥珀色,晶莹透亮,香气浓郁,鲜甜醇厚,柔和爽口,为历届国家优质酒。除行销国内大部分省市外,还远销日本、美国、泰国、新加坡及港澳地区。
