观察色拉油、菜油、高温油及油烟冷凝物对大鼠脂质过氧化物及甘油三酯、胆固醇的影响。结果表明:以20%(w/w)加入大鼠饲料中喂养1个月,除色拉油组肝组织中LPO升高不明显外,其它各组血清、肝、脑组织中LPO均比对照组明显升高。各组间比较,油烟冷凝物组LPO高于其它组。大鼠吸入油烟(270~280℃)2h/d,连续两周后,血、脑中LPO升高,肝组织中升高不明显。胆固醇、甘油三酯均高于对照组。
The effects of salad oil, vegetable oil, high temperature oil and fume condensate on lipid peroxides, triglycerides and cholesterol in rats were observed.
