黄曲霉毒素 B_1(Aflatoxin B_1—AFTB_1),是至今已发现的毒物和致癌物中最强的一种,可对多种动物(包括猴子)诱致肝癌。食品中 AFTB_1与人群原发性肝癌的关系,国内外均有报导,但国内从熟食品中 AFTB_1的实际摄入量与人群原发性肝癌死亡率关系的流行病学调查及长期观察其两者关系的研究,尚属空白。为此,我们对原发性肝癌死亡率较高、较低的县进行了本次调查研究。
