发酵大豆食品具有多种生理功能,本文主要介绍了其血管紧张素转换酶(ACE)抑制活性和抗氧化活性。我国还需要对发酵大豆食品进行更深入的研究,明确生物活性成分的结构与功能之间的关系等,以便更好地加以开发和应用。
Fermented soybean food has a variety of physiological functions, this article describes its angiotensin converting enzyme (ACE) inhibitory activity and antioxidant activity. Our country still needs further research on fermented soybean food, clarify the relationship between the structure and function of bioactive components and so on, so as to be better developed and applied.
