真菌毒素污染是危害全球食品安全的主要问题之一.真菌毒素通过结合极性物质形成隐蔽型毒素,在传统的分析检测中往往被忽略.本文综述了国内外几种常见隐蔽型毒素的研究进展及近年的污染状况,并讨论了几种主要分析方法的优缺点.从实际应用的角度,以往关于多组分同时检测的研究表明,液相色谱串联质谱(LC-MS/MS)法是可用于多种真菌毒素及其隐蔽型日常监测的最有力的定量检测方法.由于研究表明隐蔽型真菌毒素往往与原型同时存在于食品中,并能水解而释放有毒的毒素原型,造成潜在危害,因此对隐蔽型真菌毒素发生机制、分析方法、代谢规律进行深入研究,对保障食品安全与人类健康具有重要意义.
