目的:了解辖区内中小学校、托幼机构集体食堂的卫生状况,采取相应措施,预防食源性疾患(食物中毒)在辖区内学校、托幼机构的发生。方法:按照《中华人民共和国食品安全法》、《餐饮业和集体用餐配送单位卫生规范》、《学生集体用餐卫生监督办法》和《学校食堂与学生集体用餐卫生管理规定》的条款,制定统一调查表格,对有关食堂的卫生状况进行现场调查。结果:1.88%的排水设施、3.8%的灶房卫生、3.8%的消毒设施、7.69%的四防设施、1.86%的卫生管理、38.5%工作衣帽和10.32%食品采购不符合有关要求;19.62%的从业人员未能养成良好的卫生习惯。结论:发证后重点加强食品采购和擅自进行改建扩建的管理,督促学校、托幼机构加大对食堂建设的投入并加强对食堂从业人员的卫生知识培训。
Objectives: To understand the health status of collective canteens of primary and secondary schools and nurseries in the area and take appropriate measures to prevent the occurrence of school-based and nursery-school structures in food-borne diseases (food poisoning). Methods: In accordance with the provisions of the Food Safety Law of the People’s Republic of China, the Code of Hygienic Practice for the Catering Industry and Group Dining Delivery Unit, the Measures for the Health Supervision of Students in Group Meals and the Regulations on the Health Management of School Canteons and Students’ Collective Dining, a unified investigation Form, on the health status of the canteen on-site investigation. Results: 1.88% of drainage facilities, 3.8% of kitchen facilities, 3.8% of disinfection facilities, 7.69% of four defense facilities, 1.86% of health management, 38.5% of work clothes hats and 10.32% of food purchases did not meet the relevant requirements; 19.62 % Of practitioners failed to develop good hygiene practices. Conclusion: After the issuance of certificates, emphasis should be placed on strengthening the procurement of food and the management of reconstruction and expansion without supervision. Schools and childcare institutions are urged to increase their investment in canteen construction and to enhance the hygiene knowledge training for canteens practitioners.
