由现行工艺生产出来的萝卜红色素带有萝卜特殊的异味,严重地影响了该色素的使用,因而工业上急需寻求一种脱味效果好、能用于工业化生产的萝卜红色素产品的制取方法。以红心萝卜为原料,采用酶解法、壳聚糖沉淀法和双水相萃取法,结合树脂吸附法进行实验,结果表明:双水相萃取结合树脂吸附法脱除异味效果最好,粉末状成品中异味物质异硫氰酸酯的去除率高达94%,且无“返味”现象,但该法终产品的花青素含量略有降低。
The radish red pigment produced by the current process has a special odor of radish and seriously affects the use of the pigment. Therefore, there is an urgent need in the industry for a preparation of radish red pigment which is good in deodorizing effect and can be used in industrialized production method. The experiment was carried out by using enzymolysis method, chitosan precipitation method and two-phase water extraction method combined with resin adsorption method. The results showed that the best aqueous phase extraction combined with resin adsorption method was the best removal of odor, The odor removal rate of isothiocyanate is as high as 94%, and there is no “back smell”, but the content of anthocyanidin in the final product of the method is slightly reduced.
