冰花、刨冰作为一种新型冷饮品,在我区许多市、县发展较快。这种速冻冷饮食品通过冰晶体解冻后容易回复原来的状态,更好地保持原有的质量,同时在低温下,更有效地抑制微生物和酶的活性,使食品可较长时间地保存。速冻冷饮食品比其他方法更能保持食品的新鲜色泽、风味和营养成分。因此在冷饮业中目前颇受欢迎,供应量大。由于市场的需求及随之而来的卫生质量问题,我们于1991年9月在南宁市开展了对这类冷饮食品的卫生细菌学检查,现报道如下。
Binghua, shaved ice as a new type of cold drinks, in many cities and counties in our area developed rapidly. The quick-frozen cold-drinks can easily restore the original state after being thawed by the ice crystal, maintain the original quality better, and at the same time, inhibit the activity of the microorganism and the enzyme more effectively at low temperature so that the food can be preserved for a long time. Frozen cold foods are more capable of preserving the freshness, flavor and nutrients of foods than other methods. So in the cold drinks industry is currently very popular, large supply. Due to market demand and consequent health quality problems, we conducted a sanitary bacteriological examination of such cold foods in Nanning in September 1991 and are reported below.
