水酶法提取植物油脂技术取得重大进展

江南大学食品学院仪器科学研究所王璋、许时婴、王瑛瑶、钱志娟等多位专家,经过近二十年的研究,成功研制出简单可行的水酶法提取玉米胚芽油和花生油的工艺路线,且得率达88%~92%,居国际领先水平。据介绍,水酶法是一种新兴的提油方法。它以机械和酶解为手段降解植物细胞壁,使油脂得以释放,可以满足食用油生产“安全、高效、绿色”的要求。其最大的优势是在提取油的同能有效回收植物原料中的蛋白质(或其水解产物)及碳水化合物。与传统高温浸出法相比,减少了浸出及去杂精炼设备,简化了四分之三的设备与工序,投
