超声波法辅助提取黑豆种皮花青素的工艺优化

在超声波法辅助提取的基础上,采用L9(34)正交实验设计,研究了提取液pH、提取温度、提取时间和料液比对黑豆种皮中花青素提取得率的影响,优化了黑豆种皮中花青素的提取工艺。结果表明,供试因素对黑豆种皮花青素提取得率的影响顺序是:提取液pH>料液比>提取温度>提取时间;确定的黑豆种皮花青素最佳提取工艺条件为:提取液浓度为50%,pH2.00的乙醇水溶液,料液比为1:25(g:mL),提取温度为50℃,功率为400W超声波提取10min。在最佳组合条件下,黑豆种皮中花青素提取得率3.87mg/g。 On the basis of ultrasonic assisted extraction, the effects of extraction pH, extraction temperature, extraction time and solid-liquid ratio on the extraction rate of anthocyanin in black bean seed coat were studied by L9 (34) orthogonal design.
