本文研究了山楂色素的光谱学特性，Ｒｆ值、液相色谱性质。初步探明了山楂色素由两种色素组成，均为矢车菊色素，一种是矢车菊色素－３－半乳糖苷，一种是矢车菊色素的双糖或三糖苷类，两种色素的相对含量分别为８０４％和１９６％。
