大蒜应该是国人餐桌上最重要的香料之一了吧,它去腥膻、增奇香,适用面极广,从大蒜头、大蒜叶,再吃到蒜苗,既是食材,也是佐料,且兼备药效。几乎触及各类食材,各类料理方式和菜系:蒜泥白肉,蒜蓉蔬菜,蒜蓉粉丝蒸菜系列,红烧的菜里少不了几瓣蒜,爆炒类的菜式里,葱姜蒜总是必不可少的一组黄金搭档。但很显然,人们对于蒜的态度是两个极端,喜欢则厨房里少不了它,讨厌的甚至闻不得一点味道。而对于那些爱吃蒜的人,最容易认为:不能吃蒜的人吃饭有什么意思!?
