锌作为一种非常重要的营养素正日益得到全世界营养学界和医学界的公认,这方面的研究工作已广泛展开,仅1984~1985年所发表的有关论文就有2500篇。锌广泛地存在于微生物、植物和动物体中,是包括人在内的所有生物的必需微量元素,具有很重要的营养功用,与生物的核酸和蛋白质代谢密切相关,并可促进生长发育,保持视力和味觉功能,提高机体的免疫能力,促进创伤愈合。大量的临床和实验研究表明,锌与创伤愈合密切相关。创伤、手术、烧伤后,机体处于应激状态,需锌量增加,出血、渗出及尿中锌丢失增多,摄入量减少及吸收障碍,均可使体内锌减少。血清锌是反映短期内锌代谢的敏感指标之一,创伤后血清锌迅速下降,一般1~2天降到最低水平。多数病人在两周左右恢复正常,重症病人恢复时间延
