对于桥水库8种重要经济鱼类营养价值进行分析评价。采样氨基酸自动分析仪和凯氏自动定氮仪对肌肉进行成分分析。结果表明:8种鱼样品均检测出17种氨基酸,必需氨基酸的含量及其占氨基酸总量的比例都高于联合国粮食及农业组织/世界卫生组织(FAO/WHO)提出的标准。根据氨基酸评分(AAS),8种鱼类的第一限制性氨基酸为甲硫氨酸和胱氨酸,第二限制性氨基酸为苏氨酸;而根据化学评分(CS),其第一限制性氨基酸为甲硫氨酸和胱氨酸,第二限制性氨基酸为苯丙氨酸+酪氨酸。于桥水库出产的鱼类是营养全面的优质蛋白源,是人类理想的动物食品。
The nutritional value of eight important economic fish in the bridge reservoir was analyzed and evaluated. Sampling of amino acid analyzer and Kjeldahl automatic nitrogen analyzer for muscle composition analysis. The results showed that all the seven kinds of fish samples detected 17 kinds of amino acids, and the content of essential amino acids and their percentage of total amino acids were both higher than those proposed by the UN / FAO / WHO. According to the amino acid score (AAS), the first limiting amino acids of the eight fish species are methionine and cystine, and the second limiting amino acid is threonine; whereas according to the chemical score (CS), the first limiting The amino acids are methionine and cystine, and the second limiting amino acid is phenylalanine + tyrosine. The fish produced in Yuqiao Reservoir is a nutritious and comprehensive high-quality protein source and is an ideal human animal food.
