生姜(Zingiber officinale Roscoe)别名紫姜、鲜姜、老姜,属姜科姜属多年生草本植物,原种植在我国中部、东南部至西南部各省。生姜根茎肉质、肥厚,内含多种营养成分,其除含有碳水化合物、蛋白质、多种维生素和矿物质外,还含有姜辣素、姜油酮、姜烯酚及姜醇等,因而具有特殊的芳香和辛辣味,有“菜中之祖”的美誉,是我国重要的调味蔬菜和出口创汇蔬菜。生姜还可加工成干姜作药用,是我国中医药的常用成分[1],可起到降温提神、抗菌防病、治疗肠炎、开胃健脾及防暑救急等功用。
