试验研究了桑椹红色素的提取条件,色素对于日光、温度、氧化剂和还原剂的稳定性。通过对不同提取剂、提取时间、提取温度等研究结果表明桑椹红色素的最佳提取工艺是:0.1%HCl-95%乙醇溶液(1∶1)作为提取剂,物料/提取剂=1∶10,温度70℃,提取时间2h。桑椹红色素的最大吸收波长是516nm。桑椹红色素溶液对光照、氧化剂和还原剂不稳定,低温下相对较稳定。
The extraction conditions of mulberry red pigment and the stability of pigment to sunlight, temperature, oxidant and reducing agent were studied. The results showed that the optimum extraction conditions of mulberry red pigment were as follows: 0.1% HCl-95% ethanol solution (1: 1) as extractant, material / extractant = 1:10 , Temperature 70 ℃, extraction time 2h. The maximum absorption wavelength of mulberry red pigment is 516nm. Mulberry red pigment solution of light, oxidant and reducing agent is unstable, relatively stable at low temperatures.
