构建了电子鼻检测系统,用于绍兴黄酒总糖含量的快速预测,采用具有8种气体传感器的电子鼻系统检测了元红、花雕、善酿、香雪4种经典黄酒样品,同时实验检测了黄酒样品的总糖含量,采用非线性双重叠加随机共振提取电子鼻检测数据的特征值,采用特征值结合黄酒样品总糖含量检验结果建立了总糖含量预测模型。该模型不但可以预测黄酒样品的总糖含量,而且可以实现黄酒样品的类型检测。该方法在黄酒品质分析领域具有广阔的应用前景。
An electronic nose detection system was constructed for the rapid prediction of the total sugar content in Shaoxing yellow rice wine. Four electronic samples of red rice, flower carving, good wine and sweet pepper were tested by electronic nose system with 8 gas sensors. At the same time, The total sugar content of the sample was determined by non-linear double superposition of stochastic resonance. The eigenvalue of the electronic nose detection data was used to establish the prediction model of total sugar content by using the eigenvalue combined with the test results of the total sugar content in rice wine sample. The model can not only predict the total sugar content of rice wine samples, but also achieve the type detection of rice wine samples. The method has broad application prospects in the field of quality analysis of rice wine.
