为了有效而简便地对鱼类等水产品进行新鲜程度的评价,提出通过三甲胺/氧化三甲胺(TMA/TMAO)摩尔比值对鲈鱼的新鲜程度进行测定,验证TMA/TMAO摩尔比值作为测定鲈鱼新鲜度指标的可行性。结果表明:随着贮藏时间的增加,TMA和TMAO变化趋势不稳定,很难对鲈鱼做出准确的鲜度评价,而鲈鱼在0、5℃贮藏条件下的TMA/TMAO摩尔比值呈稳定的上升趋势,并且同一贮藏温度下TMA/TMAO摩尔比值与挥发性盐基氮值、菌落总数显著相关(P<0.01),相关系数r均大于0.900。说明TMA/TMAO摩尔比值可以作为判定鲈鱼新鲜度的指标。
